-
Hulling
- Process: Dried beans (now referred to as parchment coffee) are passed through hulling machines to remove the parchment layer, exposing the green coffee beans.
- Inspection: Beans are inspected for any remaining parchment fragments and defects.
-
Polishing (Optional)
- Purpose: Some beans may go through an optional polishing process to remove any silver skin left on the beans, resulting in a cleaner appearance.
- Equipment: Polishing machines are used, but this step is not mandatory and depends on market preferences.
-
Grading and Sorting
- Size Grading: Beans are sorted by size using screens with different mesh sizes.
- Density Grading: Gravity tables or air jet systems separate beans by weight.
- Colour Sorting: Optical colour sorters remove any beans with defects or undesirable colours.
-
Quality Control
- Cupping: Samples of the cured beans are roasted and cupped by trained Q-graders to assess flavour profile, aroma, and any defects.
- Batch Approval: Only beans that meet Kummul Coffee’s high standards are approved for packaging and export.
-
Packaging
- Preparation: Approved green coffee beans are packed in 60kg jute bags, which are lined with GrainPro or similar material to preserve freshness.
- Labelling: Bags are labelled with all necessary information including origin, grade, and lot number.
-
